Mussels Á La Casco Bay

December 3, 2010 By Carol Tanner (aka Mother)

My fisherman son, Craig, grows mussels on a rope in a raft in beautiful Casco Bay. His Mussel Farm was featured on one of Martha Stewart’s TV Shows. She had several recipes but this recipe is one of Craig’s family favorite ways to enjoy his harvest.

lbs Mussels, medium size
3 cups Water
2/3 cup White wine
1 Tbsp Casco Bay Seafood Boil
2-3 Tbsp Mother’s New England Chili Salsa

First rinse the mussels. (The mussels should be tight close, discard any if open.) Place mussels in a large pot with 3 cups of water, the wine and Seafood Boil. Cover and cook on medium heat until all shells open.

Remove the mussels from the pot and garnish with Mother’s New England Chili Salsa.
