Dennis loves to serve this beautifully colored vegetable dish with ham or chicken. The fresher the carrots the better!
6 Fresh carrots
1 tsp parsley flakes and fresh ground pepper
4 Tblsp Mother’s Mountain Classic Honey Mustard
Cheese: grated Cheddar, mozzarella or your favorite
Cut carrots into spears and place into a casserole dish. Cover with water. Sprinkle the parsley flakes and pepper over the carrots. Spread the mustard over the carrots and cover. Microwave for 25 minutes. Remove from oven and sprinkle cheese over carrots and cover until cheese melts. Serves 4.
