Mother’s Creamy Swiss Chard

December 10, 2010 By Carol Tanner (aka Mother)

Carol made this for Dennis and he thought it quite tasty with his meat and potatoes!

1 Tbsp Olive Oil
1/4 cup chopped onion
1 lb. Fresh Swiss Chard
2 cloves of garlic, chopped
2 large tomatoes, chopped
1/2 cup of sour cream or plain yogurt
1/2 cup lowfat milk
1/4 cup of parmesan cheese
Fresh Ground Pepper
Cheese: grated Cheddar, mozzarella or your favorite

Wash Swiss Chard, cut into small pieces. Heat oil in large 2 quart saucepan over medium-high heat, 1-2 minutes. Add Swiss Chard, garlic and onion; cooking 1-2 minutes, stirring occasionally. Add tomatoes, sour cream, milk, parmesan cheese. Stir well.

Try this over fettucine or you favorite pasta!
