Fried Rice

1 cup rice (Long Grain – follow cooking directions)
4-5 Slices of Bacon (diced) and drippings (meat substitute will work)
3-4 eggs
2-4 cut green onions, tops included
Leftover bits of pork, before bacon, chopped into small pieces
Soy sauce to taste

Cook and cool rice a day ahead. It’s best if rice has a chance to dry out a bit.
Brown the bacon until crisp. Remove the bacon and turn down heat. Slightly beaten eggs and pour into skillet with hot bacon drippings. Add rice and onions; mix together. Add bacon and leftover meat. Mix. Add Soy Sauce until the rice is as brown as you like it.. Stir well and cook on low heat for about 20 minutes.
