Dijon Dill Poached Halibut

Delicate and delicious, Dijon Dill and Halibut. When my sons brought home the catch of the day we’d cook it up like this!

3 Cups water
1/2 cup white wine
1 bay leaf
6-12 peppercorns
Dash thyme, crushed
1 sprig parsley
1 1/2 lbs. halibut steaks
Fresh Dill
Cucumber slices

Combine water, wine, bay leaf, peppercorns, thyme and parsley; bring to a boil. Add halibut. Reduce heat; cover and simmer 10 minutes per inch thickness measured at its thickest part or until halibut flakes easily when tested with a fork. Gently remove halibut and drain. Serve hot or chilled. Garnish with Mother’s Mountain Dijon Dill Sauce, cucumber slices and fresh dill.
