Craig’s Baked Scallops

My son Craig, like me, could swim before he could walk. This is Craig’s Scallop recipe!

1 pound fresh Maine scallops
1/4 stick of butter or margarine
2 Tblsp Mother’s Mountain Pure Star Thistle Honey
1 1/2 Tblsp Mother’s Mountain Classic Honey Mustard
1 roll of Ritz crackers

Melt the butter, honey and mustard in a small saucepan. Crush the whole roll of Ritz crackers in a separate bowl. Butter the bottom of a baking pan and lay scallops flat. Pour melted liquid over scallops evenly then spread crushed Ritz crackers over top. Cook uncovered for 25 to 30 minutes at 350. Do not over cook.
