Brownies

4 Tblsp butter
2 oz unsweetened chocolate
8 oz bittersweet chocolate
2 eggs
1 cup white sugar
2 tsp vanilla extract
1/8 tsp salt
8 Tblsp all-purpose flour
1 cup chopped nuts

Preheat oven to 325°. Lightly coat an 8 x 8 x 2 baking pan with butter, dust with flour, set aside. Melt the butter, unsweetened chocolate in a double boiler over medium heat. In a large bowl, hand beat eggs and sugar with fork or whisk until mixed. Stir in vanilla and salt. Add the chocolate mixture and stir until combined. Stir in flour and nuts. Spread batter evenly in the prepared pan. Bake on the middle rack of the oven for 35 to 40 minutes. Cool in the pan on a wire rack.

For moist Brownies: avoid over beating batter or over baking.

Makes about 8 Brownies
