We’ve always made our potato salad with a little bit of this and a little bit of that, so now I have written this recipe down. We enjoy making it with our zesty honey mustard.
6 medium red potatoes
2 onions, chopped
1 green pepper, chopped
4-5 radishes, minced
2 stalks celery, chopped Paprika
1/4 cup reduced-calorie mayonnaise
1/2 cup plain low fat yogurt
2 Tblsp cider vinegar
2 Tblsp Mother’s Mountain Zesty Honey Mustard
1/2 tsp celery seed
Fresh ground pepper to taste
Cook potatoes until tender. Cool. In a large bowl combine potatoes, onions, pepper, radishes, celery. Mix together dressing ingredients and add to potato mixture. Toss gently. Garnish with paprika and chill 2 hours before serving. Serves 8.
