When my sons brought home the catch of the day, this was a favorite recipe.
1 pound of fresh fish
2 Tblsp margarine or butter
2 Tblsp of whole wheat flour
1 3/4 cups of milk
1/8 tsp or pinch of freshly ground pepper
2 Tblsp Mother’s Mountain Peppercorn Dijon Mustard
1/4 cup grated Parmesan Cheese
1/4 cup bread crumbs
Make a white sauce with margarine, whole wheat flour and milk. When thickened, add pepper, mustard and cheese. Pour over fish in baking dish and top with bread crumbs. Bake 20 to 25 minutes at 350 degrees.
